Broccoli and Apple Salad with Walnuts

Need something easy and super nutritious as a side dish or a quick afternoon snack? Try this Raw salad, with Broccoli, Carrots and juicy bites of Apple from The Paleo Leap!  Top it with Walnuts and dried cranberries, toss with as much dressing as you like to get the perfect balance of creamy and crisp!

 

If you don’t like cranberries you can always substitute raisins instead. For even bigger flavor, try roasting the walnuts for 4-5 mins before you toss them in.

Serves 4

Ingredients:

2 Medium heads of Broccoli, chopped

1 Large Carrot, grated

1 Apple, cored and finely chopped

1/4 cup onion, finely chopped

1/2 cup Walnuts, coarsely chopped

1/4 cup Cranberries

Ingredients for Dressing:

1 cup Mayonnaise

2 Tbsp lemon juice

1 Clove Garlic

1 Tsp Raw honey

Sea salt and ground pepper

Preparation:

1. In a bowl, combine all the ingredients for the dressing. Mix well and season to taste.

2. In a large bowl, combine broccoli, carrot, apple onion, cranberries and walnuts.

3. Mix as much dressing as you like into the salad and toss until well combined
