Healthy Breakfast Muffin Recipe



Oil spray

1 1/2 cups cooked small pasta

1 cup cauliflower, grated

2 green onions, sliced

1 small zucchini, sliced

2 cooked lean sausages, finely chopped

1/2 cup grated cheese

2 tsp chopped herbs

ground pepper

6 Eggs

3/4 cup skimmed milk

3/4 cup self raising flour

Method: Preheat oven to 180 degrees. Spray a 12 whole muffin tin with oil.

In a large bowl, mix together pasta, veggies, sausages, cheese, herbs and pepper.

In another bowl, combine eggs, and milk. Use a whisk to stir in the flour and remove any lumps. Add to veggie mixture and mix well to combine.

Divide mixture evenly between muffin holes and bake for 20-25 mins or until golden and set.
