Spicy Sweet Potato Soup
2 large onions
1kg orange coloured sweet potatoes
25g fresh ginger
1 tbsp Rice Bran oil
1 tbsp mild curry power
2 litres of chicken stock
Parley or fresh coriander (optional)
Peel & chop the onions & sweet potatoes.
Peel & finely chop the ginger.
Heat oil in a large saucepan, add onion & ginger & cook for about 5 minutes until onion is soft.
Stir in curry powder & cook gently for a couple of minutes being careful not to burn the mixture.
Add the sweet potatoes & stir through the onion mixture.
Pour in the chicken stock & bring to the boil. Reduce the heat, cover & cook for about 30 minutes until the sweet potatoes are cooked.
Blend the soup until smooth.
Sprinkle with chopped parsley or coriander if desired.
You can adjust this recipe to your taste, by varying the amounts of curry powder & ginger.
